3 egg whites, room temp.
1/8 tsp salt
1 tsp lemon juice
1 cup sugar
1 T cornstarch
2 kiwis, peeled and sliced
4 strawberries, sliced
(or whatever fruit you would like)
1. Preheat oven to 250. Line a baking sheet with parchment paper. Beat the egg whites until they begin to foam, then add salt and lemon juice. Continue to beat until soft peaks form. Slowly add the sugar. Continue to beat until stiff, glossy peaks form. Gently fold in the cornstarch.
2. Using a spatula, place the egg whites in a circle on the baking sheet. Make the edges a little thicker than the middle. You don’t want the whole thing to be too thin.
3. Bake for one hour. Turn oven off and keep Pavlova in oven for 30 minutes.
4. Gently slide Pavlova from the parchment paper onto a service dish. Immediately before serving, top with whipped cream and fruit. Slice like pie and enjoy!
